Shoulder is a joint that does well with time, and ours is boned and rolled, so it carves easily. Our rolled shoulder of pork is free-range, from within a 20-mile radius. Roast it slowly at a low temperature for several hours until the meat is soft enough to pull apart, or at a medium heat for a sliceable roast. Serve with apple sauce, roast potatoes and plenty of gravy.
