Duck Legs

Duck breast cooks quickly and comes with a layer of fat that crisps up well. Ours is free-range, from Devon. Score the skin, start the breast skin-side down in a cold pan and let the fat render slowly for about eight minutes, then turn and cook for a few more minutes. Rest it, slice it and serve it pink with an orange sauce, or with cherries and potatoes.
