Boneless Leg of Pork

Boneless leg of pork is a big roasting joint with no bone to work around, so it is easy to carve into even slices for a crowd. Ours is free-range, from within a 20-mile radius. Season it, roast it at around 180°C, allowing about 30 minutes per 500g, and check that it is cooked through before resting it well. Cold slices make excellent sandwiches the next day.
