Butterflied Leg of Lamb

A butterflied leg of lamb has the bone taken out, and the meat opened out flat, so it cooks evenly and quickly. Ours is free-range, from farmers we know and trust. It is ideal for the barbecue: marinate it in garlic, lemon and herbs, then cook it over a medium heat for around 15 minutes each side for pink lamb. Rest it well, then slice it across the grain.
