Lamb Pinwheel

A lamb pinwheel is lamb rolled into a spiral, so it cooks evenly and slices into neat rounds. It is made with free-range lamb. Roast it in a hot oven for 30 to 40 minutes, depending on size, or cook it on the barbecue, then rest it for ten minutes before slicing. Roast vegetables and a little mint sauce go well.
