Unsmoked Gammon

Unsmoked gammon is a traditional joint with a clean, ham-like flavour, and ours is dry-cured with no added water. Simmer it gently, then roast it with a glaze of marmalade or honey and cloves, until it is golden. Serve it hot with roast potatoes and parsley sauce, or cold at Christmas and on Boxing Day alongside pickles, chutney and a crusty loaf. Leftovers are good in sandwiches and pies.
