Smoked Gammon

Our smoked gammon is a dry-cured joint with no added water. Soak it overnight if you prefer a milder joint, then simmer it gently in water or cider and finish it in the oven with a honey and mustard glaze. Serve it hot with parsley sauce and potatoes, or cold with piccalilli and a crusty loaf. Leftovers are good in sandwiches, pies and pea soup.
